Egg Muffins

Egg Muffins are such an easy way to prep breakfast in advance and have a bunch ready for the entire week! This recipe is so versatile and can accommodate so many different types of your favorite veggies!

Ingredients

  • 1 Tbsp Olive Oil1 medium onion, chopped

  • 1 red pepper, chopped

  • 3 raw turkey sausage links – skin removed

  • 12 eggs

  • ½ tsp sea salt

  • ½ tsp pepper

  • 1 cup spinach, chopped


Instructions

  • Heat oil in a skillet.

  • Once hot, add onion and pepper and cook until caramelized.

  • Add sausage meat and cook until no longer pink.

  • Allow to cool.

  • Meanwhile, in a mixing bowl, beat together the eggs, salt, and pepper.

  • Stir in the spinach.

  • Mix in the sausage mixture.

  • Pour into greased ramekins or muffin tins.

  • Bake for 20-25 minutes or until cooked thoroughly.


Notes Try adding any of the following for other flavor alternatives: broccoli, fresh diced mushrooms, parmesan cheese, diced cooked carrots, chopped cooked turkey bacon.
