Egg Muffins are such an easy way to prep breakfast in advance and have a bunch ready for the entire week! This recipe is so versatile and can accommodate so many different types of your favorite veggies!

Ingredients
1 Tbsp Olive Oil1 medium onion, chopped
1 red pepper, chopped
3 raw turkey sausage links – skin removed
12 eggs
½ tsp sea salt
½ tsp pepper
1 cup spinach, chopped
Instructions
Heat oil in a skillet.
Once hot, add onion and pepper and cook until caramelized.
Add sausage meat and cook until no longer pink.
Allow to cool.
Meanwhile, in a mixing bowl, beat together the eggs, salt, and pepper.
Stir in the spinach.
Mix in the sausage mixture.
Pour into greased ramekins or muffin tins.
Bake for 20-25 minutes or until cooked thoroughly.
Notes Try adding any of the following for other flavor alternatives: broccoli, fresh diced mushrooms, parmesan cheese, diced cooked carrots, chopped cooked turkey bacon.
